In the past, I've always picked the 16 year old and not thought about it at all. But today I looked at the Spd & Str that was showing. Here they are:
16 year old - 13 spd, 8 str, 7 sta
17 year old - 12 spd, 15, str, 4 sta

If you think it takes 3-4 weeks to get 1 fitness point, that means you will get 4-5 fitness points per year. The 17 year old is 4 points ahead. Is it better to grab the 17 yr old and get to the higher caps rather than chance a low str cap with the 16 year old?

Since the talent and caps are completely random, all you need to do is calculate the current total of speed and strength. Any difference can be factored in by how many points they can gain in the number of seasons it would take to equal the difference. Then you need only make an educated guess if you think the likelihood of a physical characteristic capping in the meantime. I generally go with the younger player, but I've also had them cap very low. As a rule of thumb, I like to take the player with the highest combination score of speed and strength. If there's a tie, then take the younger one

dont forget that older player has a minimal strenght cap at 15, while the younger one can have it at 9

Agreed, I mentioned that:

"Then you need only make an educated guess if you think the likelihood of a physical characteristic capping in the meantime."

That's the reason I prefer to take the highest total speed + strength

agreed.... i tend to do the Speed+Strength thing, give a bonus for big stamina differences, and take age into account finally...

personally i try to take the youngest option SPD + STR if there is an older option i -6 points from his total to determine pick I also pay attention the secondary skills with getting multiple choices it can be a deciding factor

How do you get to see the physical ratings before you pull them?

With each upgrade to the youth academy, you get an additional physical skill revealed. Once it's fully upgraded, you can see speed, strength, agility and stamina
