Okay if i were attacking down the middle flank would it make my WR go into the mid. for the ball.
And would it go to my WR TE or random?

Sorry to burst your bubble but the middle isn't technically a flank because, well, it's the middle. To answer your question, my guess is passes would go to both tight ends and wide receivers but tight ends would have a higher probability of getting thrown to

But lets say I wasn't playing any WR's would attacking down the middle increase my passing sufficiency?

not playing wrs would increase that if your TEs are better receivers than WRs
The direction of attack would not really matter.
