well mainly it sets up the match ups between offensive and defensive players. If you see a weakness in your opponent, you would want to attack that flank. If your quarterback is well seasoned and very intelligent, you might leave it up to him to pick the best match ups. Personally I like to see where the defense i'm facing is weak and attack that flank
