At the moment you can only measure how often their tackles got broken by the receivers

You can also roughly estimate average yards against per completion.

This is unfortunately a big weekness of the game. There is just no real information about the quality of your line-up or how players played apart from the star rating and some stats. I've asked if there are any plans to approve these ratings. Answer: nope. IMHO, certain other far less usefull features are considered more important.
For me it would be a great and very usefull addition to the game if you could get passing, receiving, rushing ratings, ... With this information you would know where the weaknesses lie in your team. You could then act upon that.

All the stats pertinent to those ratings are provided by the game. Every league has a slightly different formula to calculate the ratings. No offense meant....But IMO if the available stats donot help you decide which qb/rb/wr is better, the ratings wont butta ya muffin....
True there are not enough defensive stats....But the current game engine has a static roadblock defensive scheme, so the stats cannot be generated(or are useless) before the game engine is improved
