Until you got all VIP seats constructed, then you shouldn't worry about coaches. After the VIP is done I would recommend investing in a 20 Fitness Coach and then build the Fitness Center and fully upgrade that. When that is done it is time to build all the Executive seats and after those are build you can hire more coaches (20 in all, except Kicking/Punting) and build a Training Hall and fully upgrade it.

But in fitness training, I may choose between Strength, Stamina and Speed. Should I train all fitness abilities or choose one from them? Since I'm not a Supporter, I don't know what abilities are capped.

If you are on a Windows machine then I can recommend using pstimple's program called GIMS that can be found in the rookie section under the Tools post.

This might assist you in monitoring the potential capped skill situation. The other option is to do all the calculations yourself and then you can estimate when the different skills are capped and limiting the loss of training to one week.
