When you train focus on, you lose 10% of the training points, when you choose all skills in a category then all of the points are used.
Personally i like to focus on with the exception of the fitness skills

Training the fitness skills in the start of your time building a new team is a very good decision. Not only do you learn your players strength and speed cap, but also their salary doesn't increase in the off-season, since fitness skills don't count in salary calculations.
If you own a supporter account you can see it in the player training details. If you dont have, you need to watch the players progress each week and follow them based on the math in the FAQ to guess if there is a cap or not...you will not see it in game.
