Just got my first player from a bid!
Just wondering how often transfer updates happen. If anyone knows that would be good,

the first points from the Help/FAQ:

1. Grid-Iron week
Here are the main events that happen in Grid-Iron world (server time):
Daily/weekly update
Weather update - Every day at midnight
Transfers - Every day at 01:00 AM
Construction update - Every day at 00:30 AM
Injuries (Healing) - Every day at 02:00
Training / Youth players pull reset - Every Friday at 04:00 AM
Economy update (plus wages, income and expenses) - Every Wednesday at 04:00 AM

That is 1am server time.

If you have a look at the Help/FAQ it lists all of the times for each of the updates

Regional Cup Winners - Season 8

the players who have been bought / sold on your 'bid' page will be removed, and only those still available to bid on will be left, all those players you have bought will be added to your roster at this time, along with having there entries added to the "club transfers" list.

Does the game add any time at the end of the auction when a bid comes in near the end?

yes.
when you offer others will always have 2 minutes to overbid you.
