If you don't pick up a youth player for the week, do the choices stay on and then you get to pick up 2 players the following week? If this is the case, how many youth picks can accumulate before they disappear and you lose the selection?

No, not possible.
So be sure to pick a player every week

Can i pick a youth player and then fire him without any expenses? If there are 16 and 17 year old boys, is the younger one a must-choice?

Yep, firing comes with no expense. If you wish to sell(because you think he could have some value to someone) then you'd have to pay a 2500 dollar fee plus tax.

You can pick whoever you want, but most people do go with the younger player. I personally do that so that if he is worth keeping, I can have him for one extra season.
