I haven't hit the limit yet, but I think it's 70 players.


To OP:
In the early stages, I feel it's best to keep roster numbers low to keep salary low. Since there's no substitution, all you really need is enough players to make a starting lineup, and a couple of extras to fill in for injuries. After you build your stadium up and get some good money coming in, you can get more players and start developing prospects.

But as others have said, that all up to each individual.
