does a DL nose tackle plays the same as good as if he plays DL takle (left)?

the same question with OL, guard=center

That is a good question,
i dont really know what difference the gameengine makes,
but imho the guys in the middle (i.e. C,G,DT,NT) should have
the greatest Strength , godd Agility and Footwork.

The guys on the outside (T,DE) should have great strength
descent speed and better agility and footwork.

Sounds good to me.

I'd like to add that if you play a 3-4 defense, use the man in the middle as a NT ( with DE's) because he is lined up against the center and for the 4-3, use the 2 guys in the middle as DL's (with DE's).
