My FB gets more rushes than my RB... is there a reason why? I'd like to have my running back doing the running, fullback doing the blocking

I wish there was more control over the play calling.

you run a strong I formation
if you have a rush to the right side, your FB will take it

i suggest running an I form
if your HB and FB are in the same place, the HB gets it

For what it's worth, I did play against a bot team.

Anyways, lets get this straight... the prefer sides option effects all offensive plays?(I thought it only works on passing plays since it includes options like "QB's choice" and "attack through center" )

That leads to another question.. And are the play selections reduced by selecting different sides/center preferences?
Like for example if I chose to prefer to attack through center, am I going to get less sweep plays or out routes and more dives rushes and slants(assuming these type of real world football routes exist in game)?

Well this certainly answered many questions.
My FB has been having a monster year but I'd like my HB to run more.
