I'm just wondering if anyone noticed a similar behavior or if you see an explanation for this.
So the story is the following.
I have a player, with natural position CB. He has pretty good skills (not superstar but decent)
His natural position is LB, he has 2.5 stars rating in player page, but always 1 star in game.
Again any clue?

My experience is, that CB's require catching. Maybe that is the reason for your first player.
Regarding the second. Probably he needs more strength, otherwise he seems to be quite a good LB. BTW try him as a CB.
What I do generally when evaluating players, is that I check their tackling/running/catching performance if available, and try to use that information to decide to use them in certain positions and increase that positional rating.

my suspicion is this is due to stamina and consistency
if they're not at 100% energy they might play below form
also that 3star rating is their maximum playing level (from my interpretation) and if their consistency is low they'll often play worse.

Player Ratings
Individual Rating (For example, Matches) = rating + positional stats + stamina + consistency + team chemistry
Positional Rating is like another statistic for a given position the only difference being that rating can only be improved by playing games on that position (instead of training).
As you can see positional rating is just a component of the individual rating.
as far as being rated as a better ST CB than a regular one. The two are different skillsets entirely.

I see that some players (DL and OL) get higher match ratings, closer to their ideal ratings, shown in the player's page
