What are the benefits of an upgraded nutrition center? Can my little 16 yo 5'6" dl grow up to be a big boy?

No, he can't but you can assign more players to the nutrition center.

Be aware that the nutrition center has no game effect at the moment. Your players can get heavier or thinner, but this doesn't do anything as far as the game is concerned. This was added in anticipation of the V.2 update which never happened. It's possible that V.3 will utilize it, but we've had no confirmation of this. V.3 is expected to be implemented this off-season we think/hope.

Just in case it matters in the future, I am using an upgraded nutrition center to get all of my players to optimum weight before we have to pay the weekly fee to maintain the center.

I did the same thing in the first week the centre was introduced into the game expecting V2 at the end of that season. I think it was season 8 or 9. Very rarely do I have it full nowadays.
