How do you go about actually moving a players position
Play him at the position you want him to be. Eventually, he will change positions. Look at the red ? by Rating stars. This shows you the rating the player has for each position. A player gains .5 star rating for every 10 games (some disagree with this number) they play at the position. The first .5 star may come quicker than 10 games. This gives you an idea of how long it will take the player to change positions.

Just so you're aware it's possible to have players that are good at two positions. I have a 5* Kick Returner, that for the past season and a half (probably more actually) I have played at Wide Receiver instead, now he is nearly a 5* wide receiver also.
Best thing to do it you're new. Train speed/strength/stamina until they cap, then work out who will be best where in your team and just play them there from now on.

I agree about training speed and strength first. However, I only train stamina if it under 5 or at the end of the season if I am concerned about a player going up in skill that could cost me more salary for next season.
