For a new team, you shouldn't be at a point were you are looking at secondry skills to be trained.

IMO, main skills to 8..
i.e. QB=Passing, WR=Catching..etc.
By the time you accomplish that you should have about 13500 VIP/Exec/Seats and I would no longer call you a new team..
If you're debating between two guys for the same position with a similar skill set, then by all means it depends on the position but I'd go with the guy with a higher talent, if same talent, then higher strength..

Positioning for defence, footwork for offence.

I hear so many times about higher talented players. Is there irrefutable evidence that a player of 5 star talent is better than an otherwise identical player of 4 star talent? If so, has anyone any indication of the degree of difference this talent makes? Would, for example, a 5 star talent kick a 1 star talent's ass?

No and Yes. I say go the with the higher talented player because of his eventual Potential BPOS. Talent alone has nothing to do with performance, but BPOS is calculated.
If all other skills are the same, whichever player has the higher BPOS will be the better player, and the lower the skill set(like for new teams) the larger the advantage of a higher BPOS..
