I didn't do anything so far but maybe I'll send a quick thank you for accepting my challenge when a team with a much bigger stadium accepts to host a friendly against me.

Especially when I was flag collecting, I found that sending someone an email made it more likely that they would accept my offer of a friendly. Often, someone couldn't play me that week, but they nearly always scheduled me for a future date.
