If a player with a Best Position as RB and an only an "if really needed" position of WR is played at, say SS, will he ever convert to a Best Position of SS?

Yes. It's based on the number of stars for each position in their profile. These increase, slowly, the more you select them in a different position. So if you keep playing him at safety then eventually that will become his natural position.

As a guideline, you can estimate an BPOS-increase of half a star per 10 games, depending on the talent of your player.
