what should normal team size bee some thing like this
QB 2 player
WR 3 player
RB 3 player
TE 2 player
OL 6 player
DL 5 player
LB 4 player
SF 4 player
CB 2 player
K 1 player
G 2 player

you don't really need 3 RB's in this game. I wouldn;t go for 4 safeties but 3, and 2 KR is enough as well

I've seen teams with rosters of 70+. I wondered if they were addicted to the transfer market or whether they viewed having 40 extra players as a talent farm with which to make money. I can't see the sense in it myself, but maybe one day it will make sense.

its generally a young high talented cast of players training fitness skill to find the next generation of star players

Personally, I keep a starter at each position based on the offense and defense I am planning to run. Everyone else is a developmental person that I have on the roster. Once I find out where their physical caps are, I either fire/sell them or start working on the BPOS for the position they are best suited for based on their physicals. Once they are as good as my starter, I fire or sell the starter.

I think most managers follow a similar strategy.

You can't add players through the transfer market once you get above a certain number of players (it might be 70). You can only add via the weekly youth pull at that point.

and then when stadium grows. add 1 to all positions except K + CB + KR + G.

In the current engine i would go with...

QB 2 player
WR 2 player (one is injured you pay a stand in and pass to the opposite side)
RB 1 player (injury - stand in in current engine)
TE 1 player (one is injured you pay a stand in and pass to the opposite side)
OL 6 player (1 can be a youngster though)
DL 4 player (3 should be capable of playing DE)
LB 4 player (if a LB is injured play 4 DL, if DL injured play 4 LB's)
SF 3 player
CB 3 player (you can increase to 4 with a youngster)
K 1 player
G 2 player
KR 2 player

if your really looking to trim costs... make your 3rd SF also your 2nd QB... just add in the passing...
