I'm really struggling on how to do this, and it's not in the FAQ or forum bits I've been able to find.

Just HOW can you challenge another team or arrange a friendly (i.e not just ask for one on a forum...).

on the team home page u will see a challenge button on the right hand side. if its bold then u can challenge them by clicking it if shaded then they have a match already.

That suggests you can only arrange friendlies one week at a time. Is that correct?

Yep, can only arrange for following Monday.
