I would not sacrifice a LB to have 3 SF's, unless I only had 3 decent LB's. For example you get an injury to one of your top 4 LB's and the 3 SF's setup will put better talent on the field. A solid LB corp is the heart of any great defense

Stoo's team is a points scoring machine, the best there is - that's why he wins. Quite a few teams have racked up points against him, he just outscores them.
The 4-3/3-4/3-5 really needs to suit the players you have.
I've experimented with all three and can say that on average less points are scored aginst me when I use the 4-3.
However, I think that may just be because my DLs are better than my DBs (something I'm trying to improve). Other teams may differ.

i always plaayed this season 2 strong sf. i played bots most times, but was only disappointed once when i got a 78yards pass-TD against me, but that happens to everyone i guess from time to time.
but i would never saxcrifice a LB for a safety, perhaps if the opponent plays on pass i would spare one of the DLs rather than a LB.
