i'm gone in "settings" but i can't change the team-name field...

Wondering this myself. You're supposed to be able to do it between the Wednesdays but so far you can't change it.

They've been running really slow --and probably forgot-- but keep checking on it because we are definitely in the pre/between season

IIRC from past offseasons, you should be able to change it on Friday.
