At level 4 there can be 20 players in the nutrition center. I hope this helps you.

You are actually allowed 70 players.

To prevent you going over. If you bid on player in the transfer market. Then this acts as taking up a slot.

However if you have 70 players. You can still add one more by selecting a youth pick.

Oh if it for national teams. Players can only be added to rosters when call ups are allowed. It is normally a week or two time period. Not the middle of the cycle.

If a player on the NT is dropped by their regular team (or it was a bot team taken over by human owner), the player goes to transfer list automatically since they are NT player. If the player goes through the transfer list twice without any bids, they disappear permanently.

When a player does this on the NT, the roster has to be 'reset' or something in order for the spot to open up again. Typically, the admins only 'reset' it once a year and that's before the World Cup season starts. You can try, but I'd say this late in the season, you're out of luck. I have the same problem as well. One NT player went to the list without me catching it and I lost him. That's the chance you take picking players off of bottom tier bot teams.

Does the nutrition center update occur at the same date / time as the training update, or are those two separate events?
I had the assumption that the nutrition & training updates were tied together, but just noticed that my players nutrition center and weekly weight gain/loss has already occurred.
