How large is the training bonus from a coach? If I add a level 20 coach in a category, how much will that affect training for that category?

You'll get 20 additional training points. Each coach skill means one additional point for the player if you trained him on that category.

Keep in mind that it takes 100 training pts in a skill to raise a skill by 1 skill point. And, not all training pts go towards one skill each week, even if you focus train. All training pts are divided among the skills in the category you are training.

About adding coaches. It is best to add coaches in as few jumps as you can to get to max (or where you want to keep them forever). When you buy coaches, you aren't adding coaches to what you have already purchased. You are firing your current coaching staff and hiring a completely new staff.
So, if you buy 20 fitness coaches now and then decide you want to add 20 defending coaches later, you will have to buy the 20 fitness coaches again as well as the 20 defending coaches at the same time, (unless you don't want the fitness coaches anymore for some reason.)
And each time you buy coaches, you must pay the signing bonus.

I think the best option is to buy 20 fitness coaches when you can afford it. It's best if you can also buy and max the fitness center at the same time. Then save up your money for a while and train all players to find caps in speed and strength, then get their stamina up as well.
After most of your players have found their caps in speed in strength, you should have quite a bit of money saved up (provided you built your stadium right before hand) to build the training center. When it's complete, buy max coaches (20's in everything, though I think some prefer 10 in kicking), then max out training center.

This prevents you from having to pay the signing bonus numerous times and once you are at this point, you should never have to worry about your coaching staff again.

At no point would I recommend buying any level of coaches under 20 (except for maybe kicking if you prefer it low full time). It's just a waste.

Personally, I wouldn't worry about coaches until you have your stadium built a bit more. All VIP and exec seats should be built before you add any other facilities or staff in my opinion. Once you have that financial base built, the rest comes a bit easier and is much easier to keep. If you start the other stuff too soon, you may have to back track or sell off players to keep afloat.
If I remember correctly, it took me 2 or 3 seasons before I was in good enough financial situation to buy coaches and facilities.
